What is Einkorn? Einkorn is an ancient grain that has not been modified during its 12,000-year existence. Einkorn contains 14 chromosomes versus modern wheat's 42 chromosomes. This means that it has a low gluten content and may be easier for you to digest. Unfortunately, it does contain some gluten, and therefore if you have Celiac's Disease you may have an adverse reaction to this wheat.
Why should you eat Einkorn? Einkorn contains 1) more riboflavin (vitamin B2) which stimulates your body's metabolism and aids in digestion and absorption of fats, carbohydrates, and proteins; 2) more beta carotene (vitamin A or retinol) which aids in good vision and eye health, a strong immune system, and healthy skin; 3) more lutein, an antioxidant, that protects your cells from damage.
How do I prepare Einkorn? You may grind Einkorn wheat berries with a countertop mill to provide yourself the freshest whole grain flour, you may cook it for soups or salads, and you may use it for porridge.
